On behalf of its Organising and Scientific Committees, we are pleased to confirm that the Food Structure, Digestion & Health International Conference 2025 will be held at the CSIRO Food Innovation Centre, Werribee, from 17–20 November 2025.
The 2025 conference will spotlight the latest advances in food structure design, digestive behaviour, the gut microbiome, and emerging innovations such as AI-driven food design and sustainable nutrition policy.
The conference will also emphasise excellent science and highlight the industry relevance for food development and innovation. The presenters are encouraged to submit abstracts that showcase how their science can be applied in the food industry. There will be a lively debate on the balance of processed food and whole food nutrition and AI innovation round table discussions with industry.
The Food Structure, Digestion & Health International Conference brings together professionals from the food industry and world-leading scientists – from disciplines including food science, nutrition, digestive behaviour, sensory science and food engineering. This event promotes a cross-disciplinary approach to food design that improves nutrition, functionality, and consumer health outcomes.

Pre-Conference Masterclass: Food Structure & Function
This intensive masterclass (17th November 2025) will explore advanced analytical techniques and technologies for characterising food structure and function. It is ideal for early career researchers, postdocs, PhD students, and technical professionals to obtain a broad knowledge about food structure function relationships and its relevance for food development and innovation.

Abstract Submissions
We invite abstract submissions for oral and poster presentations under the following themes as well as the sub-themes identified in the program:
- Food Structure Design, Processing and Digestion
- Food, Microbiome, nutrition and Health
- AI application and in-silico modelling of in body functionality
Abstracts (poster and oral) must be submitted using the official template (Word, 45KB) and emailed to FSDH2025@csiro.au.
Abstract deadline: 22nd August 2025
Students and early career researchers submitting a poster abstract will be eligible for the three Best Student Poster awards, which will include a cash prize of AU$300 for first, AU$200 for second and AU$100 third place.
